Greetings one & All!  Back in the 1990's (when I was a Chef / Restaurant Owner), I had written several cookbooks.  By coincidence, just the other day I happened to open a box in a closet and found 9 copies of my PUT SOME SOUTH IN YER MOUTH COOKBOOK which was published during my Big Daddy's restaurant days.

From 1993 to 2002, I owned a restaurant called Big Daddy's (Massapequa, NY) with my wife, Sweet Loretta.  At that time, I was very focused on the Cajun / Creole cuisine of New Orleans.  As time went on, my culinary adventures eventually began to draw me towards the entire southern region of the USA. and that's exactly what inspired this particular cookbook.  Many of the recipes that appear in this cookbook are my own adaptations of classic Southern dishes.  I firmly believe that Southern food is the true American cuisine.  It has an earthiness and familiarity about it that is unmatched by any other food culture.  When you put some south in your mouth, you will feel right at home for sure!

One of the tragedies of our modern life is that a great many food traditions with the realm of Southern cooking have begun to fade away.  Cooking Southern style requires a bit more time than we're used to in this age of quick cooking a la microwave and fast food eateries.  That's why I like to call the kind of food that I like to cook "slow food".

Some of the recipes included in this book are some of my most popular dishes from my days as the Chef From Hell @ Big Daddy's Restaurant here in Long Island (1991 - 2001).  The cookbook features such lively recipes as Mardi Gras Mambo Gumbo (Note: in the Odds & Ends section of the book is a great recipe for making a cajun roux for your gumbo), Vidalia Onion Pie, Mississippi Caviar, Georgia Cracker Chicken, Chicken Metarie, Crawfish Etouffee, Charleston Roast Pork and more!
